Ice cream course for professionals
Innovation, science, and entrepreneurship
The 20th-24th January 2020 we are hosting a week long ice cream course with emphasis on being innovative in the ice cream industry, understanding the science behind ice creams and sorbets, and learning about the steps to becoming an ice cream entrepreneur.
You will obtain knowledge about the ice cream science and we will convert it to practicalities.
This course is for you if:
- you want to open an ice cream shop or have ice cream in your restaurant.
- already work in the ice cream industry and want to understand the use of ingredients to the fullest.
The full program is revealed October 1st 2019.
Classes are running from 9-17 Monday to Thursday and 9-15 on Friday.
The course is taught in English by Cathrine Østerberg
Each participant will receive Østerbergs newly published book “ice cream according to Østerberg”, a full compendium (in English), daily lunch and refreshments during the day. All produced ice cream can be taken home at the end of each day.
