In an attempt to spread the joy of ice cream science we have created an ice cream school right next to our first ice cream shop in Østerbro. The courses are held at Rosenvængets Allé 7b, 2100 København Ø and signing up by e-mail or in the shop is a prerequisite.
Since the aim is to be internationally known in the field of ice cream, this text is in English.
Ice cream course for professionals
Innovation, science and entrepreneurship
The 20th-24th January 2020 we are hosting a week long ice cream course with emphasis on being innovative in the ice cream industry, understanding the science behind ice creams and sorbets, and learning about the steps to becoming an ice cream entrepreneur. You will obtain knowledge about the ice cream science and we will convert it to practice.
This course is for you if:
- you want to open an ice cream shop or have ice cream in your restaurant.
- already work in the ice cream industry and want to understand the use of ingredients to the fullest.
Classes are running from 9-17 Monday to Thursday and 9-15 on Friday.
The course is taught in English by Cathrine Østerberg
Each participant will receive Østerbergs newly published book “ice cream according to Østerberg”, a full compendium (in English), daily lunch and refreshments during the day. All produced ice cream can be taken home at the end of each day.

We are teaching courses with individual sign-up on the following days (either taught in Danish or English – see for each date):
The Basics 895,- /person
Anyone who is eager to learn about making your own ice creams and sorbets are welcome at this ice cream course. We will go through the foundation of ice cream science and the making of ice creams using different ingredients.

The advanced 995,- /person
Ideally you have a good knowledge in the field of cooking/food science and/or you have been at a basics course. Anyone is welcome to participate, but we expect you know certain things to begin with, and things will get scientific and detailed. You will learn to calculate your own recipes from scratch.
